Sauna Sunday: Chocolate PB Oreo Shake & White Calzone/Pizza Hybrid

So apparently Southern California was too busy social networking to read the memo that summer normally starts in June. But apparently all required reading has been caught up on because this weekend was filled with 100 degree weather.

I somehow managed to complete a 5 mile training run yesterday (more on that tomorrow) as well as walk around running errands to the tune of 7 miles.

So to say I was slothlike today, would be an understatement…though do you think the heat was enough to sap my appetite?

Au contraire…I began my day with a visit to the Farmer’s Market where I picked up the secret ingredient for tonight’s dinner (see more below) and spent the afternoon reading and basking in a wonderful sugar coma earned from a decadent chocolate peanut butter oreo shake at Millions of Milkshakes.

As soon as my stomach started rumbling, I motored into the kitchen because I was very excited about the dinner I was preparing.

Ever since I saw this white pizza post on A Soy Bean I have been experiencing a wicked strong craving for it but wanted to come up with my own spin on the dish.

Things came full circle at the Farmer’s Market today when my friend discovered Bolani!!!

Basically, they are these delicious flaky Afghani flatbreads stuffed with everything from spinach to potatoes to pumpkin. After he tried several flavors with their homemade spreads, my friend dragged us over there so that we could experience the deliciousness ourselves.

I had an out of body experience that could only be aborted by me frantically shelling out the cash for a package of spinach bolani and a container of rich creamy sundried tomato vegan pesto.

A recipe instantly became forming in my head and I can honestly say this was one of the simplest and most delicious meals I have ever made.

Without further ado, my SIMPLE White Calzone/Pizza Hybrid

I spread the top of a spinach Bolani with creamy garlic hummus and mozzarella Daiya cheez, popped it in a 400 degree oven and baked until the cheese was perfectly melted.

Served with a simple salad of fresh Farmer’s Market greens (did you know red mizuna tastes like baked potatoes), this made the perfect Sunday supper.

The best news about Bolanis: you can order them online!!!!!

2 Bolanis come in a package so I will probably slather the sundried tomato pesto and more Daiya atop the other one!

What are some of your favorite simple cooking accomplishments?

Do you score awesome finds like Bolanis at your local Farmer’s Market?

Does extreme heat sap your appetitie?

  2. Nothing saps my appetite.

Simple recipe: vegetarian (vegan) spicy refried beans, daiya, tortilla wrap. Roll together, microwave. If there are avocados around, an easy guac.

I’m a fan of the BIG salad too (Seinfeld anyone?), with pre-chopped veggies from TJ’s and then I’ll make it “fancy” with kalamata olives. If I’m feeling adventurous a chik’n patty cut up in it too.

    • Wow you must read my mind! I just bought corn tortillas, salsa, daiya and vegetarian refried beans yesterday!!

I love a good salad too with lots of raw veggies, sometimes sliced roasted sweet potatoes, chicken patty or chickpeas! I like to put a scoop of hummus on top too (I eat hummus on hummus)

I’d definitely take advantage of awesome finds at a farmers market if there was one near me. Massachusetts sucks man.

  7. [...] I was first introduced to this delicacy at my Farmer’s Market and admittedly did not have high hopes for what looked like a very flat bread stuffed with spinach. But I’m always in need for a good receptacle for hummus, pesto and Daiya so I decided to give it a try. And blow my mind the Bolani did, with this white pizza I whipped up on a major sugar high.
