The Holiday Weekend In Food and My New Favorite Margarita Recipe

I definitely got into some good food this weekend!!!

Homemade tortilla chips and perfected margarita (see recipes below), hummus guacamole (from TJ’s) and roasted corn black bean salsa.

Easy tortilla chips:

1) spray corn tortillas with cooking spray, paprika and cayenne pepper.

2) stack the tortillas on top of each other and cut into halves, then quarters, then eighths

3) either bake the chips at 350 for 7 to 8 minutes or fry them in a skillet with about 1/2 inch of oil (flip once if using skillet)

4) drizzle finished chips with lime juice and top with salt

Simply Succulent 4 Ingredient Margarita

Mix together a shot of clear tequila with about three ounces of lemonade (I like Trader Joes stevia sweetened version) and about two ounces of lime flavored sparkling water. *It is okay if you don’t have a shaker, you will just need to use a rocks glass with ice and stir the glass thoroughly to ensure that the flavors are well distributed*

Top with 1-2 ounces of your favorite juice (I like pineapple or raspberry), salt if you’re feeling salty and voila!!!

    Carol’s cupcakes look incredible. I LOVE LOVE LOVE almond everything I wish I could eat them!

      The almond butter filled cupcakes were the first to sell out-good thing I got there early enough to get one!

      Carol also made chocolate cupcakes with a cherry in the middle, lemon cupcakes and a soy free cupcake.

  2. I think I might love that margarita – I usually stay away from them because they are SO strong and SO sweet. Will have to try it next time I have some tequila on hand. :)

  3. Ok, those cupcakes look to die for. And if I hadn’t been feeling quite death-y on Saturday (I blame Truckstop entirely, I really was forced to drink as much as I did), I would have devoured those at the DVD release party!
