I first met Kim Barnouin about seven years ago. We share a best friend who I know agrees with me that it’s been so incredibly inspiring to see her spread the message that veganism is easy and delicious, with too many health benefits to count via both her Skinny Bitch books and her Healthy Bitch Daily site.
So you can imagine how excited I was when Kim sent me a copy of her latest book: Skinny Bitch Ultimate Everyday Cookbook. It’s fast becoming one of my favorite cookbooks, due to the innovative recipes that even a novice cook like me doesn’t find daunting.
Her butternut squash sage ravioli was even served as a hors d’oeuvre at a recent wedding I attended and got rave reviews from all the non-vegans in the house.
While admittedly, I generally face plant first into the dessert section of any cookbook, I found myself riveted to the condiment section. Don’t get me wrong: the dessert section is stellar (even featuring a recipe from the Spork sisters), but what had me especially enticed were the inventive sauces, drooling over everything from rich and creamy squash sauce to avocado and jicama salsa, champagne vinaigrette and even veganized versions of blue cheese and ranch.
Not to mention, any healthy cookbook that features a recipe for “antioxidant sangria” gets an A in my book (if you insist, I need some antioxidants, I’ll whip up a batch. Twist my arm…)
In fact, I like this cookbook so much that I am going to give a copy to a lucky winner.

My favorite dish this summer has to be cucumber salad: cukes, red onion, splash of red wine vinegar and olive oil, and fresh dill. YUM…make it at least once week

I came up with this last weekend:
rice-pasta blend
water
earth balance
sea salt
nutritional yeast
Cook first four ingredients in the rice cooker and stir in nooch in the final minutes. YUM! (a friendly blog reader suggested it was was a vegan version of Rice-a-Roni. Love that!)

I’m going back to some more vegan ways, so this cookbook would be awesome. I have been loving a quinoa, red cabbage, green lentils, mint & walnut salad lately. The dressing is made with tahini, oil, red wine vinegar, garlic & tamari. Ok, so it’s really two 5 ingredient recipes. Hope my entry still counts!

One of my favorite vegan dishes is what I call my “vegan comfort food” and it’s good old fashioned fried potatoes.
Slice potatoes, boil, drain, saute onions, add potatoes, salt and pepper and fry until golden and a little crispy.
Ingredient number #5 is ketchup on the side!
