Best Thing I’ve Eaten All Week: POTATO PANCAKE “CAPRESE” SANDWICH

I have been very busy this weekend including going on a great run with an awesome new blog (and now real life) friend spending the day and helping volunteer with Pets for Vets at a Puppy Mill Awareness festival…I had major puppy envy and wanted to take home 20 dogs.

But it wouldn’t really be a weekend recap if I didn’t tell you about the most delicious thing I have eaten all week.

I mean it’s no secret that I love the pancakes and “soul food plate” at Hugo’s, but this month they have really outdone themselves with their specials to commemorate the restaurant’s 30th birthday (I can only hope to age as gracefully when I hit that milestone in a few months).

I split 2 dishes with my friend Jen:

Eggplant Melanzine Layers of deep-fried crispy breaded eggplant, filled with tofu ricotta. Topped with mushroom-vegetable Bolognese sauce and Daiya cheese.

This dish was definitely rich, earthy and delicious, but the real star of the show was enough to elicit a flavor experience like none other.

I now present to you the potato pancake “caprese” sandwich

This vegan beaute consisted of two perfectly crispy and flavoful potato pancakes layered with grilled tofu, vegan mozzarella (tasted like Daiya to me), heirloom tomatoes and olive tapenade relish.

Jen and I seriously couldn’t even speak while eating this sandwich and I felt like I was frozen in time while I was eating this sandwich…nothing else existed.

All I can say is HUGO’s please keep this on your menu permanently!!!!!!!!!!!!
